FERMENTING
You can ferment the pastries on bins of your choice with or without a special support. Models of proofing cabinets have an integrated, completely insulated fermentation space, including special thermostatically regulated heating, a steam tank and optimized air circulation.

The
data of fermented dough pieces is indulgent, because you can simply place the skips on top of the grease tray and press the folding mechanism. A cupcake feeder can be attached to the grease tray to load cupcakes and doughnuts faster.

BAKING
After placing the dough pieces, press the start button and if necessary close the grease trap flap. The screen shows the cooking time of the remainder.

ROTATE
The automaton turns all pastries simultaneously, automatically and indulgently according to the chosen baking program. If the flap is closed, the PLC opens it automatically before the turn.

At
the end of the cooking program, the rotating device is located in the picking position. You push the picking carriage under the turning device and place the pastries indulgently on the picking trolley by pressing the turning lever lightly. Then you push the picking trolley with the pastries through the drainer.
